- This is my favorite recipe for Caesar Salad.
-
- 1 Head Romaine Lettuce - Washed and shredded into bite size pieces. (I
- like to trim the ribs from the leaves.)
- Parmasan cheese
- 1 egg
- 1/4 cup (or a little less) olive oil
- 1 clove fresh garlic
- juice of 1/2 small to medium lemon
- 1/4 tsp dijon mustard
- Dash worchestershire sauce
- salt and pepper (optional)
- Garlic and onion flavored croutons
-
- Place shredded Romaine in large bowl and chill.
-
- Dressing:
-
- Crush garlic in a small mixing bowl. Add worchestershire sauce,
- mustard, olive oil, and lemon juice. Mix thoroughly with a wisk. Add
- egg and wisk thoroughly.
-
- Sprinkle parmasan over lettuce. Pour dressing over and toss to coat. Add
- croutons and toss again. Serve immediately.
-
- Note: The amount of parmasan used can vary according to your taste. I
- like the cheese so I use a lot.
-
- Enjoy.
